This gyuto was crafted by Joeseph Schrum of Halcyon Forge located in Sedalia, Missouri. Joe focuses on forging a mix of the highest quality steels and accenting them with reclaimed or locally sourced materials. The blade is forged from 1.2519 high carbon steel and laminated in wrought iron. 1.2519 has very good wear resistance and ability to take a very refined edge. The bevels are kasumi finished on a progression of Japanese natural stones. The handle is a Missouri osage and oosik ferrule.
